Perfect banana bread
Ingredients
1.82 cups flour
1/4 cups lightly salted butter
2 mashed up, sort of brown bananas
7/8 tsp. salt
1 egg yolk
2 egg whites
1 cup sour cream or plain yogurt
1/3 cup light brown sugar
1 1/4 cups white sugar
1 tsp baking powder
1 tsp baking soda
1 pinch cinnamon
1 tsp genuine turkish vanilla extract
Directions
Use a big bowl. Beat the eggs. Add the other wet stuff. Add the mashed up bananas. Keep beating and add both colors of sugar for harmony. Then, add the mixture of flour, salt, baking powder, baking soda, and cinnamon. Use a hand mixer or something. Come on.
If you were smart and heated the oven to 350 F before you got all into the mixing, then it’s ready and what you need to do next is pour the mixture you made into a buttered bread pan, then pop that little sucker in the oven. Set a timer or something for precisely 58 minutes, because that’s how long it’s going to take.
You’ll know the loaf is ready when you can shove a toothpick down into the center of the loaf and pull it out and not see any banana bread goo sticking to it. Remove from the pan right away after it comes out of the oven, and let it cool on a rack. A nice rack. A really nice rack. Because that’s what this loaf deserves.
